Am so glad this flat cast iron pan was available to try, it is officially my new favorite pan after only once use!
It is heavy like expected but, not too heavy like my normal typical cast iron pan with high edges, the 1/2" max height in this pan is perfect, making it easier for me to use now that i am getting older and having hand strength issues at times.
I did not re-preseason for i wanted to review it based on how it is advertised and it was already seasoned great IMO. i did however wash it with light dish soap like i have always washed my cast iron pans with no issues, dried it and sprayed a little pam on it and distributed it around with a paper towel before using it first time. It heated up fast on medium and made a plain large size buttered tortilla with shredded cheese in it (guess most call that a Quesadillas) taste great to me, was better than pan we normally make that in. The large size mission tortilla fit perfectly in this pan and resulted in a non soggy tortilla with a slightly crunchy texture quickly without being burned! I like this pan & its weight so much i plan on buying one for making greasy dinner foods (steaks/burgers/etc) only and keep this one for breakfast & snack foods so it doesn't get seasoned with meat spices/fats.
the silicone handle included is nice but, it makes pan handle a bit too bulky for my smaller hands to hold & carry pan confortably so at first i took it back off and didn't use it but, i quickly learned it is needed with this lower pan since handle is closer to stove than it would be on your normal size cast iron pan and handle got hot quickly so i put it back on and it worked as should at keeping handle cool.
if you love your cast iron pans and don't have a flat one like this one, i highly recomend this one (assuming it is still the same flat pan currently shown that i received)..
How nice that cast iron works on induction stoves just as nicely as it does on gas or electric, so that's already a plus. This is a nicely cast griddle, with a handle that is long enough for comfortable holding and flipping, particularly important with a pan of this weight. The silicone handle cover easily slips onto and off the handle, though not so easily that it will fall off at an inopportune moment. The set comes with a small instruction booklet, well written, guiding you through the process of seasoning if needed - the set, however, is pre-seasoned and I didn't feel that additional seasoning was necessary at the start. Overall, a very nice griddle that easily holds a couple of pancakes simultaneously.
I already own and use a large 12 inch cast inch skillet but was wanting a smaller cast iron skillet for cooking smaller amounts. This Cuisinel cast iron round griddle sounded interesting, so I ordered it to see if it would meet my needs.
The griddle arrives nicely boxed and wrapped in plastic. Included is a silicone sleeve to use on the handle. In my experience silicone sleeves are more hassle than they’re worth, so I didn’t bother using it, opting to use a pot holder instead. A brief instruction booklet is included that explains how to properly care for the cast iron griddle. It is advertised as “preseasoned” but the instructions clearly advise seasoning it before its first use. Basically, you wash the griddle, dry it thoroughly, and apply a thin coating of vegetable oil on the entire griddle, inside and out. You then bake it inverted on an oven rack at 400 degrees for an hour and then allow it to cool completely. This process creates a relatively non-stick surface on the iron.
First off, this is a griddle and not a skillet. So the sides are quite short. This limits the utility of a pan like this. It is not the one to use if you have a lot of liquid stuff to cook or anything that might splatter a lot. On the positive side, the actual cooking area on this griddle is almost as big as my 12 inch cast iron skillet yet is lighter in weight. After seasoning the griddle I warmed it up on the stove on low heat, poured a liberal amount of olive oil in the bottom and tried to fry a couple of eggs. Big mistake. The eggs, even at low heat, were welded to the pan. I had to scrub the pan repeatedly with kosher salt and a brush to get all of the egg off, which took seemingly forever. If it will ever be useful for cooking eggs the griddle will need to be a lot better seasoned than that. The grilling surface is rough, not smooth, which contributes to the stickiness. I anticipate this griddle will be more useful for less sticky foods like pancakes, grilled cheese sandwiches, quesadillas, or steaks.
In summary, this cast iron griddle, when seasoned appropriately, is probably most appropriate for a limited variety of foods that you might normally prepare on a griddle. Cast iron would not be a good choice if you are wanting it to fry eggs, but it is certainly a suitable option for cooking less sticky foods as mentioned above. No price information was available at the time of this review, so I am unable to comment about price value. Typically, cast iron costs less than coated non-stick skillets and will last forever with proper care.
I know how to maintain good cast iron, I have some crappy pans, and some good ones. I have a hand hammered wok I've kept seasoned for over 25 years. I know that you never clean with soap, I typically use a bamboo brush, and hot water, then put a coating of peanut oil to keep from rusting after you dry it. This was pre-seasoned, but sometimes they do a poor job, it appears they knew what they were doing here. I re-seasoned it twice once on the stove and once for longer in the oven. The oven I let cool down naturally. I then fried some seasoned potatoes in oil and a little Irish butter (my favorite). This is a griddle so you don't want to add too much oil or use with bacon or certain meats, it will splatter a lot. Next, my favorite, pancakes. The nice thing about a well seasoned pan is you don't have to add oil each time between pouring the batter. The pan stays a nice even heat, and so you get consistent golden brown pancakes or French toast. I want to try it with other veggies, but I only have carrots around, and I keep those for stews. The initial seasoning was good enough that this reacted very well to my subsequent seasoning attempts. I cant use for even standard frozen pizza, but I do make dough in my bread machines on occasion, so I'll give that a try sometime keeping it to a nice 10 inch personal size pizza. I can probably pre-heat this in the oven, then put it on the stove top and slide on a pizza crust off some parchment paper or non-stick aluminum foil. Come to think of it a pizza peel would work as well and I have that. I think the consistent heat should give this a golden crispy crust, and I can use the broiler to brown the cheese for a few minutes. The Silicon handle with my oven gloves should keep me from getting burned. I'll have to try it for grilled sandwiches as well.
It might be considered heavy for some elderly people to handle, but it's not cheaply made, it's solid. It's not as heavy as those big cast skillets and it can also cook away from the oven using an induction cooktop, but be careful, you still need to use the silicon handle cover, and since many of those cookers have glass like tops, becareful not to slam it down, it's a lot heavier than those Japanese hot pot kettles. Recommended, a nice piece to have around the kitchen.
So my wife likes to make some kind of pancake made of odd flour (don't ask) and she pretty well tore up the old fry pan. I suggested that she try this, and she said she'd never used cast iron. I gave her a couple of tips . First, it needs to be washed - but don't use soap! Then, it needs to be "seasoned" by coating it with vegitable oil and put it in a pre-heated over at 450 for a half hour, let it cool, and it's ready to use. If done properly, it's pretty non-stick. Clean with a scrub brush, but don't use soap( which takes off the seasoning). This model has the benefit of very even heating (we use gas, so I can't say the same for electric). My only nit to pick is that its diameter is just a but smaller than the skillet I prefer. The silicon handle works well.

My daughter has gotten really into making crepes, which is tricky in our cast iron skillet with the high sides. This griddle style skillet is absolutely perfect for crepes and I love the silicone handle so a pot holder isn't needed. However, the crepes did stick even after we followed the directions to pre-season the skillet. We had to continue to use oil for the first month or so. The skillet was a little smaller than I expected but works great for the aformentioned crepes, as well as quesadillas, grilled cheese sandwich or personal size pizza. You could also grill a couple of (veggie) burgers.
What a wonderful pan this is. Perfect for tortillas, East Indian breads like puri puff up beautifully, pancakes are good as well. Sauteeing small veggies, onions, garlic, peppers, etc also come out great. you can get a nice roasted effect when desired. And the handle is truly necessary, and much easier to use than potholders.
The heat is evenly distributed, resulting in a perfect consistency whatever you're making. French toast is fabulous, as is grilled cheese- even better if you have a weighted press to use with it. The pan is a superb size- just right for so many things, not too small or too big. Although it is preseasoned, I'd recommend doing more. But that's not a negative, at all. We love this Cuisinel (Not Cuisinart) pan and it is a fabulous addition to your cookware.
Making pancakes has always been something I do for my son when he stays with me. It's a special bond we have even now that he is a teenager. In any case, after seasoning this griddle I found that it worked well for pancakes during his last visit.
A popular song suggests Maybe it's time to let the old ways die. When that comes to narrow thinking and outdated methods, that's well worth considering. But there are times where the old ways consistently prove themselves to be more economical, more durable, more effective and more simple. Perhaps nowhere is that more true when it comes to adopting cast iron into your cooking tool arsenal.
Cast iron is definitely heavier than a stainless steel pan. (I hope you've thrown any aluminum cookery you had into the garbage long ago! It's light but arguably a detrimental metal you don't want to ingest along with your cooked food!) But that extra heft is part of the magic. Iron cookery must be preheated to distribute heat throughout the metal, but once its ready you have a solid even heat that cooks things beautifully. It does require "seasoning" which is simply baking the pan at high heat for an hour after first coating it with a high flash point oil. That binds the oil deep into the pores of the metal to help make it anti-stick and to prevent rusting. I got serious about using cast iron after reading an article in Men's Journal magazine years ago, describing a method to cook perfect steaks. You heat the cast iron pan medium high to high and then throw the stake on it to get a good sear, perhaps a minute on each side. Perhaps repeating a second time for half as long. Then take the entire pan and place the entire thing inside the oven to continue cooking to your desired wellness. A quality meat thermometer will show you the internal temperature of the meat that corresponds to your liking. Thats another beauty of iron cookware, stove top to oven seamlessly. Take it out and let it rest a minute or two and you will have the most delicious perfectly cooked piece of meat every time.
This is my fourth cast iron pot, which incidentally will last lifetimes if taken care of consistently. Mine have different sizes, obviously. This is my first pan with such a low sidewall. It has the advantage of allowing a spatula to get underneath the for more easily but the disadvantage that you can't be to vigorous if you're sautéing something for fear it might fly out of the pan. For something like pancakes, the lower sidewall is perfect. the build of this pan has the advantage also of being somewhat less heavy and more easy to handle, especially if you lack hand strength. Cast iron can get heavy, especially in larger sizes. I also love that this pan comes with a silicone sleeve that fits over the handle. It's oven safe up to 450 degrees though I haven't tested that aspect yet. So far loving this pan as an addition to my others. It does come pre-seasoned though the small pamphlet suggests seasoning it again anyway, which I did. My oil of choice for this purpose is coconut. My only complaint, is that although it is the same size of another pan I have, the overall dimension is larger so that I can't close the door to my Breville toaster oven completely but it stays open just a crack. If you've never used cast iron before, you really need to dismiss the fact that it looks crude or old world. It cooks evenly, goes from stove top to oven seamlessly, is comparatively inexpensive, and it will last a lifetime with just a little care and periodic re-seasoning.
I have used this a couple of times for pancakes. First of all, there is a silicone handle grip..... yes, that is much needed and great idea. However, don't try to grab the silicone grip that is close to the griddle. It does get hot at that spot.
But, otherwise, grab the handle at the largest part.
I like that the griddle has the spill proof edge. This is a large griddle and now, I can spend time to clean my old griddle. Take care of your griddle, as there are products that treat your griddle.
Good quality, solid cast iron!
