 Dalstrong has one of my favorite steels VG-10, so when they came out with an improved version - VG10-VX, called the Omega Kiritsuke Chef Knife I had to try it. I was surprised that the design - "liquid metal" pattern, is incredible at not sticking to food (see video). It is heavier than their Shogun Kiritsuke Chef Knife by about 30 grams (see photos). The leather sheath is very nicely made and I prefer it over their Gladiator and Shogun series sheath (although I appreciate that I don't have to buy aftermarket sheath like I do with all my way more expensive knives).

The handle is G10 which is my favorite material for high end folders as it is almost indestructible as well as very grippy. While all the Shogun series have this same handle material, they have made a very nice improvement in that the handles are larger and I really like how they have done some lamination with this material so it has a beautiful "grain" to it (see comparison photo, both are G10).

I've been very happy with the knives and since I tend to collect (yea I'm a "knife nut") I really appreciate the customer service, they replaced one I had right away when I had a problem.

I know knives are very personal, and I'm always seeking something new in the new powdered steels, I like the ZDP-189 variants but they tend to stain where as the VG-10 class is a bit easier to sharpen and is more way more stain resistant. I've tried all types of styles and steels having worked in restaurants for years and teach in a culinary school. I've bought Dalstrong for a few of my Chef friends and they are the envy of the kitchen, which makes the impressive gift grade packaging/presentation well worth it. This also comes with a wooden stand which is very nice for display, and they are numbered in a limited edition series.

I am a knife enthusiast and have no affiliation with Dalstrong - yea everybody says that here so I check reviews to see if they are all positive and suggest you do so. This blade is a keeper.

I cannot write enough positive reviews for Dalstrong as a whole. I have purchased knives from the Gladiator, Phantom, Shogun, Shogun X series, and now the Omega. My career as a professional cook has been made leagues easier by these and I have since begun to fill my kitchen with them, ordering them for my cooks as well. It is the envy of even the most loyal Wusthof users. We now have two Omegas in one kitchen even. This is a knife I will keep for the house. It is heavy and ornate. The subtle belly of the blade makes it a nice easy knife for anyone from a rocker to a slicer. The heavy and rather large handle is great for a larger cook or anyone with larger hands or even just looking for a sure grip to fill the hand. The beautiful texturing is functional and keeps things like slivered onion from sticking to the sides. Can't recommend enough. Get one before they're gone!

How much prettier and sharper can it get?
I already own most of the Shogun collection from Dalstrong and I am very satisfied with it. Of course, one has to take a great care of expensive knives like this but the experience is nonetheless fantastic.
The Dalstrong Chef Knife Omega serie is truly beautiful and sharp.
Unlike the other chef knife I got, it comes with a PU leather sheath (I would have preferred real leather as the smell is not that pleasant) and a stand. Note to the manufacturer, PU is not real leather so the genuine claim in the booklet is misleading.
I immediately tried the cutting test and it sliced everything I tried perfectly.
Contrarily to the Shogun serie, it does not have a damascus pattern, in spite of the 67 layered VG10 Japanese steel. The pattern is definitely unusual and pleasant to see and feel.
It feels very well balanced in my hands and the handle is beautiful.
It is a limited edition. I got number 103 out of 500.

As every other Dalstrong knives, it comes with all the usual extra perks: The keychain etc...

This is my fourth Dalstrong and is now my favorite chef knife displacing my Miyabi 8” Kaizen. Wheras the Kaizen excels in precise tasks requiring a light weight and agile chef knife, I find that the heavier Omega gives me the confidence to use it for any kitchen task short of using a cleaver. Slicing through raw and cooked 2” top sirloin was just as effortless as slicing through a tomato. With quality and craftsmanship exceeding the listed price on Amazon, I believe the overall value of this chef knife is exceptional. I am impressed and satisfied. This Dalstrong is my omega chef knife.

I recently purchase and received the limited edition Dalstrong Omega-Series BD1N-V/Hyper-Steel 4" Paring Knife—but I have a problem...

My problem is this...just how do I adequately express pure, sublime “cutlery bliss” to those who’ve never yet experienced it? Let me try to count the ways I love my 4” Omega-Series Paring Knife:

1. Flawless as a proof coin minted at West Point
2. Stunningly beautiful as Bo Derek (I here invoke poetic license)
3. Impeccably Fit and Finished as Venus Williams (sorry, I admire her)
4. Sharp as a tooth from “Jaws” (couldn’t come up with a contemporary movie)
5. Comfortable as Warren Buffet on his corporate jet
6. Balanced like a Wallenda (oops...this might not be the best comparison)
7. Performs like Joe DiMaggio
8. Turns the heads of everyone who beholds (and holds) it

No, this is NOT a paid endorsement; and yes, I have been severely bitten by the Dalstrong bug, but I steadfastly refuse to seek a cure.

This is my eighth Dalstrong knife, and in my book, each and every one is an esthetic/performance/value winner. They are balanced, screamingly sharp, have great edge retention, and are a pleasure to hone (but ONLY on whetstones or leather strops, please).

Now, to provide myself with a modicum of objective credibility, I have read ALL of the Dalstrong reviews on Amazon, including those that are critical, especially including the two that show pictures of larger Omega-Series knives that have actually snapped into two pieces during normal use. Yikes! What happed here?

My guess is that Dalstrong needs to revisit and revise their (new) production process for their innovative Omega Series BD1N-V/Hyper-Steel blades. And I trust that they shall.

However, I’m going to risk keeping my 4” Paring Knife because it is smaller than those two other knives (an 8.5-inch Omega Chef’s knife, and a 7-inch Omega Santoku knife) that snapped in two, and “I’m just a fool who’s fallen in love”. We’ll see what happens, and I promise to report back after sufficient time and knife-use have passed.

Of course, except for professionals, no one actually NEEDS a beautifully crafted, high-end steel, Japanese-styled Knife. But then, no one actually needs sushi and sashimi, or prime beef, or belly lox, or Dover sole, or prosciutto di Parma...

...but then again (I’m talking to you, Mick Jaeger), sometimes you DO get, not what you need, but EXACTLY what you WANT.

Actually should be a 4 1/2 star rating.
The knife is sharp as to be expected out of the box. I tried a paper cut test. There seems to be one spot that hangs up a bit but the rest of the blade slices like a hot blade through butter. I think the hanging spot is possibly from the blade design.
I think the finish does NOT interfere with the blade sharpness or anticipated sharpening process when needed at some point in the future.

One mentioned problem is the sheath. I found the leather stuck to the blade from being packed and sitting for however long it was stored before being shipped to me. It took a bit of very careful manipulating to get the sheath off. Once I did, it came off easily when I tried it a couple of times.
There was one problem. There is adhesive inside the sheath that was stuck to the blade. I used some naptha to remove the adhesive from the blade. I will use an after market magnetic blade sheath instead of the leather sheath. I already had one on another knife. Plus I don't want to mess up the finish of the leather sheath - so in the box it goes.

I bought this as a gift for my daughter, Kimberly and her husband Brent. I wanted to get them a very high-end cutlery set that is both aesthetically pleasing and functional. I looked for about 2 months and finally decided on Dalstrong. After looking at all the other options available I found that Dalstrong was definitely the right choice! My daughter and her husband unpackaged this gorgeous knife and was stunned by its beauty. They have used it since receiving it and couldn't give enough praise about its ease of use and performance. They say that it cuts pretty much everything like a hot knife through butter. They just love it! I'm going to buy them the entire Shogun knife set. I couldn't be happier!

Incredibly beautiful and sharp (as expected), got some good weight to it, which I personally like. It can be used however you like, as a daily knife or as a display piece. Personally I'm somewhere in the middle, leaning towards display just because it soooo nice that I feel bad using it. I've made a video of a closeup of the knife, I'll upload it when I have a chance. Fantastic knife, I can stare at it for long periods of time. The only thing I had an issue with was that it didn't come in pristine condition, blade had smudges on both sides of the blade(like entire blade smudged up), which just impacts the opening experience I suppose. Harder to get off than anticipated but eventually got it done, now it radiates in my kitchen on the nice display stand! Should come with some high quality stone as I'm nervous to put it on the ones I have, aren't cheap stones but not high end either. Maybe I'll break down and get a quality stone for this blade and the rest of my knives.

I've had this knife for about a month and here are my impressions so far: Mine came super sharp out of the box and it feels great in my hand. It's on the heavy side of the santoku scale mostly because the handle is pretty beefy and indeed, the balance point is toward the handle. The finish on the handle is great, it transitions seamlessly into the bolster and makes for a comfortable pinch grip and the mosaic pin is huge. The blade profile is pretty flat, so you should be comfortable with push cuts if you buy this knife. There is a slight curve near the tip so it will do some shallow rocking, but it's mainly a push-cutter. The liquid metal finish on the blade looks cool and works really well for food release, especially with tomatoes. My knife just drops through tomatoes and while I can't confirm scientifically that it's because of the finish, I suspect that it is. A slight drawback to the finish is that if you press the blade against your knuckles when you chop, you will feel some friction. This isn't an issue for everyday use, but if you had to do a ton of chopping in one day, you might end up with a blister. I haven't had to sharpen my knife yet because it's still really sharp after a month, but the liquid metal finish does extend all the way down to the edge so I'll have to wait and see how that feels when I finally do have to sharpen it. Overall, it's a cool looking, very sharp, hefty, very non-sticky push-cutter.

I was hesitant to buy this at first but after seeing an impressive review on youtube I decided to take the plunge. This was my first Dalstrong purchase but won't be my last. I generally don't like to give five star reviews but in this case I cannot find anything wrong with the knife or accessories. The fit and finish is exceptional. The heft in hand and balance feels very comfortable in use. I used it for several days before posting a review because I feel that the reviews that merely describe the speed of shipping or how beautiful the product is without using it is worthless to potential buyers. The edge itself comes out of the box razor sharp and glides effortlessly through meat and veggies and while I had my doubts, the unique pattern on the steel really does contribute to its relatively non-stick surface. I find this knife a joy to use and I take my time in the kitchen very seriously so this knife adds to the experience.
